Learn how to start Cooking and Creating with Wild Plants!
Camp right on the Niangua River under the stars. In this three day class you will go on multiple wild edibles plant walks, spend time assembling Tinctures, Salves, Poultices, Wound Spray and more. The whole weekend you will get to taste new wild foods, we will assemble teas, tinctures, salve, make bannock bread, and more.
You will learn how to make and will take home a Home Herbal Kit Including:
- How to identify useful wild plants, mushrooms, as well as the ones to avoid
- Assemble a tincture
- Make a Wild Medicinal Antiviral & Antibacterial Salve
- Make a Antibacterial & Antiseptic Wound Spray
- Styptic Powder (Instant Clot)
- Insect Spray / Sunburn / Heat Spray
Plants Covered: Red Clover, Yarrow, Plantain, Pine, Echinacea, Monarda, Spicebush, Pawpaw, Maple, Sycamore, Wild Onions, Wild Ginger, Horsetail, Wild Mints, Elder, Mullein Japanese honeysuckle, Dandelion, Burdock, Red Raspberry, and More. Bonus: Mike Snyder the Mushroom Expert from Wild Wise Botanicals will be joining us.
Tubes will available for those that would like to Lazy River Float and saunter the river in between classes. We will also have marked trails, corn hole and horse shoes to toss.

Rachael West is the Owner, Lead Instructor and Founder of Eating the Ozarks. She is an Expert Forager, Wild Foods Chef and Author of Wild Foraged an educational culinary cookbook. She's taught wild foods in the Ozarks for the past decade working with KOLR-10 biweekly Wednesday's, the Missouri Master Gardeners, Springfield Community Gardens, Springfield Art Museum and more. She is a Certified Herbalist through both Rosemary Gladstar and Susan Weed.

Mike Snyder of WildWise Botanicals has been hunting and studying mushrooms in the Ozarks for 13 years and is a regional mushroom expert. He has earned the Harry Thiers Certificate of Mushroom Proficiency from the Missouri Mycological Society and is a certified mushroom identifier for commercial mushroom sales in Missouri and Kansas. He is also on the North American Mycological Association cultivation committee and the Board of Directors for the Missouri Mycological Society.
