Burdock
Parts Used: Root is used as a food source, young stems can be used as well.
Find It: Edges of forests, along fencerows, and pastures. Burdock is a plant hard to ignore once its decided to make your field its new home. Large leaves, purple flowers and seeds that stick to fur and clothing.
When to harvest (ON YOUR OWN LAND): Dig roots of first year plants in the fall or winter. Its easier to dig after a rain as roots can be 3-4 feet long. Burdock has been used as food and medicine in TCM for thousands of years. Known as Gobo overseas. Give Gobo a google for hundreds of recipes.
