Parts Used: Flowers, young leaves and late fall - winter tubers.
Find It: Your front yard, ditches and edges of fencerows. Leaves can be gathered in the early spring with young tubers. I like to dice the leaves and add to stir fry. Tubers can be used like you would a red potato. Flowers can be added to salads raw or dried for use in soup.
When to harvest (ON YOUR OWN LAND): Flowers when they appear. Leaves in the early season. Tubers in the winter.
