Parts Used: Twigs, leaves and berries.
Find It: Sassafras's is an understory tree found all over the Ozarks. It has a unique feature of 3 different shaped leaves on each tree. You'll see a Duck Foot, a Glove and an Arrow shaped leaf. Crushing a leaf will remind you of lemon balm and sage.
When to harvest: Leaves in the Spring and summer, roots have been traditionally dug from new growth near larger trees in the Fall and Winter.
Store it: Dried Sassafras leaves are the ONLY ingredient in Gumbo Filé! We love to use the leaves wrapped around chicken (similar to the recipe on the Spicebush tag) or stuff them with carrots and bake them!

Sassafras Baked Carrots or Sweet Potatoes!
(recipe by Rachael West, Author of Wild Foraged)
Add 4-6 cubes of potatoes and carrots to the center of each leaf. Fold in like a burrito until all edges have been tucked. Bake in an oven set at 350F for about 20 minutes until potatoes are soft. |
